Winner Winner Chicken Dinner


Eric and I loved the baked chicken fajitas I made last week so much, I decided to make them again. They turned out even better this time, thanks to having the proper amount of each ingredient (I planned it out this time -- I love planning things, especially when the plan works out) and some delicious toppings like guacamole and salsa and fresh whole wheat tortillas.

I write this to you from my couch. As I sit here in my yoga pants I feel full and happy and tired. Mexican food always makes me tired. There are times when I think that eating Mexican food is better than taking Tylenol PM. I swear! Mexican food solves so many problems. I think we should all eat it more. I declare tomorrow "Mexican Food Day" -- please eat a taco for me.
